COCONUT BRAISED PORK
SERVES 4-6 PREPARATION: 10 MIN COOKING: 20 MIN
30ml (2T) vegetable oil
1 onion, chopped
1 green pepper, chopped
500g cubed pork rashers (rind removed)
300ml double-cream coconut yoghurt
15ml (1T) garlic, crushed
30ml (2T) soy sauce
30ml (2T) Chinese five-spice 15ml (1T) lemon pepper seasoning
100ml water chopped spring onion to garnish ciabatta loaf, toasted and sliced to serve
1 Pour the oil into a pan set over high heat and sauté the onion and green pepper until soft.
2 Add the pork to the pan and fry until golden brown.
3 Add the yoghurt, garlic, soy sauce, Chinese five-spice, lemon pepper and the water to the pan.
4 Decrease the heat to low and leave to simmer for 15 minutes.
5 Garnish the braised pork with the spring onion and served with the toasted ciabatta.
