APRICOTS STUFFED WITH GOAT’S CHEESE AND WRAPPED IN BACON

SERVES 4 PREPARATIO­N: 10 MIN BAKING: 8-10 MIN

16 soft dried Turkish apricots

80g-180g soft goat’s cheese

18 strips of streaky bacon 40g fresh rocket leaves 5ml (1t) balsamic reduction 50g beetroot crisps

50g butternut crisps

Preheat the oven to 200°C and grease a baking sheet with nonstick spray.

1 Cut into the middle of each apricot with a sharp knife and, using your fingers, create a cavity. Fill each apricot with 5-10ml (1-2t) goat’s cheese.

2 Wrap each stuffed apricot completely in a bacon strip.

Push a toothpick through to hold the bacon in place, making sure all the flesh of the fruit is covered.

3 Put the stuffed apricots on the prepared baking tray and bake for 8-10 minutes until the bacon is crispy and the cheese starts oozing out.

4 Arrange the rocket leaves on a serving plate and drip the balsamic reduction over. Put the stuffed apricots on top and scatter the beetroot and butternut crisps over.
