SWEET & SOUR PORK STEAK ON TURMERIC NOODLES WITH APPLE & RED CABBAGE SLAW
SERVES 1 PREPARATION: 15 MIN MARINADING: OVERNIGHT COOKING: 27-35 MIN
PORK
10ml (2t) teriyaki sauce
10ml (2t) sweet chilli sauce 150g pork neck steak oil, for frying
NOODLES
15ml (1T) olive oil pinch of salt
225g store-bought turmeric noodles or add 15ml (1T) turmeric and a pinch of salt to the water when cooking the noodles
SLAW
¼ red cabbage, grated
1 apple, cored, skinned and grated
30ml (2T) mayonnaise
TO GARNISH
5g sun-dried tomatoes 1 Pork Mix the teriyaki and sweet chilli sauces and rub into the meat. Refrigerate overnight. Preheat the oven to 200°C and lightly grease a roasting pan with nonstick spray.
2 Heat the oil in a large pan and sear the meat on both sides. Transfer the meat to the roasting pan and roast 10-15 minutes in the oven.
3 Noodles Bring water in a pot to the boil. Add the olive oil, salt and turmeric noodles. Cook for 12-15 minutes until al dente. Drain and set aside.
4 Slaw Combine the cabbage and apple in a mixing bowl. Mix in the mayonnaise.
5 Put the pork on top of the noodles and serve with the slaw.
5 To garnish Top with the sundried tomatoes and serve.
