HONEY-GLAZED PORK STRIPS WITH FLUFFY MASH AND SALAD
SERVES 2-4 PREPARATION: 10 MIN COOKING: 12 MIN
PORK STRIPS
oil
600g pork strips
1 shallot, finely chopped 15-20ml (3-4t) finely grated fresh garlic
30ml (2T) crushed ginger 125ml (½c) honey
1 chopped chilli
100ml soy sauce
MASH POTATOES
4 medium potatoes, peeled and chopped
15ml (1T) butter
125ml (½c) cream salt and pepper
45g chives, chopped 1 Pork strips Heat the oil in a pan and brown the pork strips. Remove them from the pan. In the same pan sauté the shallots until transparent then add all the other ingredients.
2 Let the mixture simmer until bubbles form and it has reduced and is slightly thick.
3 Remove from the heat and add the pork strips.
4 Return the pan to the stove and reheat for 2-3 minutes.
5 Mash potatoes Boil the potatoes until soft. Drain the excess water and mash the potatoes. Add the butter and cream. Season with salt and pepper. Add the chives and mix well.
6 Serve the pork strips with the mash and a green mixed salad with added slivers of carrot and red onion.
