CHOCOLATE MOUSSE AND CUSTARD DELIGHT
SERVES 2 PREPARATION: 10 MIN COOKING: 5 MIN CHILLING: 40 MIN
CHOCOLATE MOUSSE
1 egg yolk
10ml (2t) sugar
60ml (¼c) whipping cream 250ml (1c) dark chocolate chips
60ml (¼c) fresh cream CUSTARD
125ml (½c) milk
30ml (2T) custard powder
10ml (2t) sugar
10ml (2t) vanilla essence pinch of salt chocolate slivers, fresh raspberries and fresh mint leaves to garnish
1 Chocolate mousse Whisk the yolk and sugar until thick and a lemony colour.
2 In a separate bowl, whip the cream until thick.
3 Melt the chocolate in the microwave by microwaving for 30 seconds at a time and taking it out to stir until it’s melted or in a saucepan over boiling water, stirring regularly.
4 Combine the yolk mixture with the cream and add to the melted chocolate. Stir gently, using a spatula.
5 Custard Mix a little of the milk into the custard powder. In a saucepan, combine the rest of the milk and the sugar. Gently heat. Add the custard mixture little by little, stirring continuously. Don’t allow it to boil. Stir until thickened.
6 Divide half the mousse between 2 glasses. Put in the fridge for 10 minutes. Divide half the custard between the glasses and return to the fridge for 10 minutes. Repeat with the remaining mousse and custard. Keep in the fridge until needed.
7 Garnish with the chocolate, raspberries and mint leaves.
