MUSSELS IN TOMATO SAUCE
SERVES 4 PREPARATION: 5 MIN COOKING: 10 MIN
30ml (2T) olive oil
1 onion, chopped
1 clove garlic, chopped 4 tomatoes, chopped
125ml (½c) fish stock sugar salt and pepper
500g fresh mussels, cleaned fresh coriander to garnish (optional) toasted ciabatta slices to serve
1 Heat the olive oil in a pan, add the chopped onion and garlic. Gently fry for 2 minutes.
2 Add the chopped tomatoes, fish stock and season with sugar. Stir and leave to simmer for 5 minutes. Season with salt and pepper.
3 Add the mussels, cover with a lid and leave to simmer until all the mussels have opened, about 3 minutes. (Remove any that haven’t opened.)
4 Remove from heat, garnish with the coriander and serve with the toasted bread.
