HONEY PORK ROAST WITH MASH AND VEGGIES
MAKES 4-6 PREPARATION: 20 MIN COOKING: ABOUT 2½ HOURS
whole pork loin roast, about 2,5kg
30ml (2T) dried oregano 30ml (2T) dried basil 2,5ml (½t) black pepper ¾t salt 30ml (2T) crushed garlic 125ml (½c) honey 60ml (¼c) soy sauce 30ml (2T) olive oil
TO SERVE
mash potato and vegetables of your choice
1 Preheat the oven to 160°C.
2 Put the loin in an ovenproof dish.
3 Mix the rest of the ingredients and pour over the meat.
4 Roast for 25 minutes per 500g plus 30 minutes. Add a little water to the pan if necessary.
5 Increase the heat to 200°C for the last 30 minutes until the rind is crisp.
6 To serve Serve with the mash potato and veggies of your choice.
