Spicy bean fritters

210g all-purpose flour

10ml (2t) baking powder

125ml (½c) finely chopped green pepper

125ml (½c) finely chopped onion

125ml (½c) grated cheddar cheese

125ml (½c) crisply fried and crumbled bacon rashers 2 cans (410g each) baked beans, drained

1 green chilli, chopped

5ml (1t) garlic powder

5ml (1t) salt

2,5ml (½t) freshly ground black pepper

4 eggs

125ml (½c) vegetable oil

TO SERVE lemon wedges dipping sauce 1 In a large bowl, combine all the ingredient­s except the eggs and oil. Mix until well blended.

2 In a small bowl, whisk the eggs then add to the bean mixture. Mix well.

3 In a large, heavy-bottom pan over medium-low heat, add the oil and heat. When the oil is hot drop the fritter batter into the pan by the spoonful. Cook for 3-4 minutes a side or until golden brown and cooked through. Remove and put on a paper towel-lined plate to drain the excess oil.

4 Repeat until all the batter is used, adding oil as needed.

5 To serve Serve with lemon wedges and a dipping sauce of your choice.
