AMARULA AND CINNAMON DOM PEDRO
The Dom Pedro, an alcoholic milkshake, is a local restaurant staple. We make ours with Amarula, cinnamon and homemade caramel sauce. Serve it cold for dessert.
SERVES 6 PREPARATION: 10 MIN COOKING: 5-10 MIN CARAMEL SAUCE
125ml (½c) light brown sugar
125ml (½c) cream
5ml (1t) vanilla essence pinch of salt
500ml (2c) ice cream
250ml (1c) milk
5ml (1t) ground cinnamon
60ml (¼c) Amarula (optional)
1 CARAMEL Melt the butter in a saucepan. Add the sugar and cream and cook over medium heat, stirring continuously until the sugar has dissolved.
2 Bring the sauce to the boil then simmer for 5 minutes. Remove from the heat and stir in the vanilla essence and salt. Set aside until cool.
3 MILKSHAKE Put the ice cream, milk and cinnamon in a measuring jug. Blend with a stick blender and add the Amarula (if using). Pulse until well combined.
4 Sweeten the milkshake to your liking with the caramel sauce.
5 TO FINISH Divide the milkshake among six small mugs. Sprinkle ground cinnamon over and serve immediately.
