AMARULA AND CIN­NA­MON DOM PE­DRO

The Dom Pe­dro, an al­co­holic milk­shake, is a lo­cal restau­rant sta­ple. We make ours with Amarula, cin­na­mon and home­made caramel sauce. Serve it cold for dessert.

SERVES 6 PREPA­RA­TION: 10 MIN COOK­ING: 5-10 MIN CARAMEL SAUCE

50g but­ter

125ml (½c) light brown su­gar

125ml (½c) cream

5ml (1t) vanilla essence pinch of salt

MILK­SHAKE

500ml (2c) ice cream

250ml (1c) milk

5ml (1t) ground cin­na­mon

60ml (¼c) Amarula (­op­tional)

TO FIN­ISH

ground cin­na­mon

1 CARAMEL Melt the but­ter in a saucepan. Add the su­gar and cream and cook over medium heat, stir­ring con­tin­u­ously ­un­til the su­gar has ­dis­solved.

2 Bring the sauce to the boil then sim­mer for 5 min­utes. Re­move from the heat and stir in the vanilla essence and salt. Set aside un­til cool.

3 MILK­SHAKE Put the ice cream, milk and cin­na­mon in a mea­sur­ing jug. Blend with a stick blender and add the Amarula (if us­ing). Pulse un­til well com­bined.

4 Sweeten the milk­shake to your lik­ing with the caramel sauce.

5 TO FIN­ISH Di­vide the milk­shake among six small mugs. Sprin­kle ground cin­na­mon over and serve im­me­di­ately.
