Toast­ing bread can cause some chem­i­cal changes that af­fect how healthy the bread is. In par­tic­u­lar, it may de­crease the vi­ta­min B con­tent. On the other hand, a 2008 study found that toast­ing bread low­ers its gly­caemic in­dex, mean­ing it’s less likely to cause spikes in your blood-sugar lev­els.
