SAVOURY RICE WITH HARVESTIME COUN­TRY MIX AND FRIED CHICKEN BREASTS

PREPA­RA­TION: 10 MIN COOK­ING: 25 MIN 30ml (2T) sun­flower oil 400g chicken breasts, cut into thick

strips salt & pep­per to taste 1 onion, finely chopped 5ml (1tsp) crushed gar­lic 1 red pep­per, finely chopped 15ml (1T) curry pow­der 15ml (1T) pa­prika 1 x sea­son­ing cube 3 fresh toma­toes, grated 250ml (1c) Harvestime Coun­try Mix Veg­eta­bles, blanched in hot wa­ter 500ml (2c) cooked bas­mati rice grated cheese to serve salad

METHOD 1 In a large sau­cepan, add 15ml (1T) oil and fry the chicken strips un­til they gain colour. Sea­son to taste and then set aside. 2 Heat the re­main­ing oil in the sau­cepan and fry the onion un­til golden brown. Add the gar­lic, red pep­per, curry pow­der, pa­prika and sea­son­ing cube and cook for 15 sec­onds. Add the toma­toes and leave to sim­mer for 20-25 min­utes. 3 Drain the Harvestime Coun­try Mix Veg­eta­bles and add to the sau­cepan. 4 Mix the rice with the chicken mix­ture and serve with the cheese sprin­kled over and a salad of your choice.
