SAVOURY RICE WITH HARVESTIME COUNTRY MIX AND FRIED CHICKEN BREASTS
PREPARATION: 10 MIN COOKING: 25 MIN 30ml (2T) sunflower oil 400g chicken breasts, cut into thick
strips salt & pepper to taste 1 onion, finely chopped 5ml (1tsp) crushed garlic 1 red pepper, finely chopped 15ml (1T) curry powder 15ml (1T) paprika 1 x seasoning cube 3 fresh tomatoes, grated 250ml (1c) Harvestime Country Mix Vegetables, blanched in hot water 500ml (2c) cooked basmati rice grated cheese to serve salad
METHOD 1 In a large saucepan, add 15ml (1T) oil and fry the chicken strips until they gain colour. Season to taste and then set aside. 2 Heat the remaining oil in the saucepan and fry the onion until golden brown. Add the garlic, red pepper, curry powder, paprika and seasoning cube and cook for 15 seconds. Add the tomatoes and leave to simmer for 20-25 minutes. 3 Drain the Harvestime Country Mix Vegetables and add to the saucepan. 4 Mix the rice with the chicken mixture and serve with the cheese sprinkled over and a salad of your choice.
