OAT­MEAL FLAPJACKS WITH STEAK STRIPS

MAKES 10-12 FLAPJACKS PREPA­RA­TION: 20 MIN STAND­ING: 30 MIN COOK­ING: 30 MIN

FLAPJACKS

250ml (1c) cake flour 250ml (1c) oat­meal 60ml (¼c) light brown su­gar 10ml (2t) bak­ing pow­der 2,5ml (½t) salt 250ml (1c) milk 2 eggs

STEAK

300g sir­loin OR rump steak 10ml (2t) Cajun spice mix­ture freshly ground pep­per 30ml (2T) olive oil

SAUCE

60ml (¼c) each may­on­naise and chut­ney leaves of 1 rose­mary sprig, chopped 1 gar­lic clove, chopped (op­tional) 1 chilli, chopped salt

TO FIN­ISH

oil for shal­low-fry­ing 2 radishes, thinly sliced (op­tional) fresh rocket Pre­pare a braai fire with enough hot coals to cook the flapjacks and the steak. Put a braai grid on a stand close to the coals. Keep a flame-proof pan handy.

1 FLAPJACKS Mix the flour, oat­meal, su­gar, bak­ing pow­der and salt in a mix­ing bowl. Make a well in the mid­dle. 2 In a sep­a­rate bowl, whisk the milk and eggs to­gether and pour into the well in the dry in­gre­di­ents. Mix well. Cover and leave to stand for at least 30 min­utes for the bat­ter to thicken.

3 STEAK Sea­son the meat with the Cajun spice mix­ture and pep­per and rub with the oil.

4 SAUCE Put the may­on­naise and chut­ney in a small bowl and add the rose­mary, gar­lic (if us­ing) and chilli. Sea­son with salt and mix well.

5 TO FIN­ISH Braai the steak on the grid un­til done to your lik­ing – rare, medium/rare or well done. 6 Re­duce the heat to medium by spread­ing out the coals. Put the pan on a stand over the coals and heat a lit­tle oil. Add a few dol­lops of the flap­jack bat­ter to the pan and cook un­til small bub­bles start form­ing on the sur­face. Turn over and cook on the other side un­til golden brown and done. Re­peat with the rest of the bat­ter.

7 TO SERVE Slice the steak thinly. Spread a lit­tle sauce on the flapjacks, add a few slices of radish (if us­ing), fol­lowed by a few steak slices. Gar­nish with rocket and serve.
