OATMEAL FLAPJACKS WITH STEAK STRIPS
MAKES 10-12 FLAPJACKS PREPARATION: 20 MIN STANDING: 30 MIN COOKING: 30 MIN
250ml (1c) cake flour 250ml (1c) oatmeal 60ml (¼c) light brown sugar 10ml (2t) baking powder 2,5ml (½t) salt 250ml (1c) milk 2 eggs
300g sirloin OR rump steak 10ml (2t) Cajun spice mixture freshly ground pepper 30ml (2T) olive oil
60ml (¼c) each mayonnaise and chutney leaves of 1 rosemary sprig, chopped 1 garlic clove, chopped (optional) 1 chilli, chopped salt
oil for shallow-frying 2 radishes, thinly sliced (optional) fresh rocket Prepare a braai fire with enough hot coals to cook the flapjacks and the steak. Put a braai grid on a stand close to the coals. Keep a flame-proof pan handy.
1 FLAPJACKS Mix the flour, oatmeal, sugar, baking powder and salt in a mixing bowl. Make a well in the middle. 2 In a separate bowl, whisk the milk and eggs together and pour into the well in the dry ingredients. Mix well. Cover and leave to stand for at least 30 minutes for the batter to thicken.
3 STEAK Season the meat with the Cajun spice mixture and pepper and rub with the oil.
4 SAUCE Put the mayonnaise and chutney in a small bowl and add the rosemary, garlic (if using) and chilli. Season with salt and mix well.
5 TO FINISH Braai the steak on the grid until done to your liking – rare, medium/rare or well done. 6 Reduce the heat to medium by spreading out the coals. Put the pan on a stand over the coals and heat a little oil. Add a few dollops of the flapjack batter to the pan and cook until small bubbles start forming on the surface. Turn over and cook on the other side until golden brown and done. Repeat with the rest of the batter.
7 TO SERVE Slice the steak thinly. Spread a little sauce on the flapjacks, add a few slices of radish (if using), followed by a few steak slices. Garnish with rocket and serve.
