The pork belly with crispy crackling, beetroot and palm sugar with rum reduction is a definite recommendation: slow-cooked, tender and full of flavour served with parsnip, pistachio and lemongrass. For a sweet ending, the rich chocolate bomb has a hidden center mousse with a biscuit layer for a perfect crunch and butterscotch that adds a yummy gooey center.
