250g hal­loumi cheese, cut into 4 slices 1 roasted red pep­per from a jar, sliced 2 ciabatta rolls, halved and toasted 2 tbsp olive oil

To serve

Ready-made tzatziki 1 Heat a grid­dle pan, add hal­loumi slices and cook for

2 min on each side, un­til charred. Re­move from the pan and add the sliced pep­per. Cook for 2 min to heat through. 2 Driz­zle the cut sides of the ciabatta rolls with olive oil and top with the hal­loumi, pep­pers and rocket. Sea­son with freshly ground black pep­per and serve with tzatziki.
