250g halloumi cheese, cut into 4 slices 1 roasted red pepper from a jar, sliced 2 ciabatta rolls, halved and toasted 2 tbsp olive oil
Handful of rocket leaves
Ready-made tzatziki 1 Heat a griddle pan, add halloumi slices and cook for
2 min on each side, until charred. Remove from the pan and add the sliced pepper. Cook for 2 min to heat through. 2 Drizzle the cut sides of the ciabatta rolls with olive oil and top with the halloumi, peppers and rocket. Season with freshly ground black pepper and serve with tzatziki.
