Makes 15-20 Ready in 25 min

150g but­ter, soft­ened 150g cas­tor sugar Few drops vanilla ex­tract

Pinch of salt

1 medium egg 250g plain flour

½ tsp bi­car­bon­ate of soda

200g milk choco­late drops

1 Heat the oven to 190°C. Cream but­ter, sugar, vanilla and salt. Add the egg and stir in the flour and bi­car­bon­ate of soda. Mix well to make a dough and then stir in the choco­late drops. If the dough is very

soft, chill un­til it firms up.

2 Break off wal­nut­sized pieces of dough and roll into balls. Press them on to 2 x lined bak­ing sheets, fat­ten­ing them slightly.

3 Bake the cook­ies for 10-12 min un­til brown at edges but still slightly soft in cen­tre. Re­move from the oven and leave to cool on the bak­ing sheets for a few min, then trans­fer to a wire rack.
