SAUSAGE HASH PAN

Serves 4 Ready in 25 min

2 tbsp olive oil

8 sausages, cut into chunks 2 onions, thinly sliced

2 tsp garam masala

2 x 400g tin but­ter beans, drained and lightly mashed 400g tinned chopped to­ma­toes Large hand­ful co­rian­der, roughly chopped

4 eggs

1 Heat 1 tbsp oil in a fry­ing pan and add the sausages, onions and garam masala. Fry for 10 min un­til the onions are soft.

2 Add the beans, to­ma­toes and co­rian­der, sea­son, and stir well. Cook for 5 min, turn­ing when a golden crust starts to form on the bot­tom of the pan. Fry the eggs in re­main­ing oil and serve on top of the hash.
