Serves 4 Ready in 25 min

300g chicken breast fil­let

2 tbsp ready-made bar­be­cue mari­nade Sun­flower oil spray

1 small red pep­per, de­seeded and sliced 1 onion, sliced

Wraps, to serve

40g soft blue cheese Shred­ded iceberg let­tuce, to serve

1 Cut 3-4 slits across the chicken breast and brush over the bar­be­cue sauce to coat. Put the chicken on a foil-lined tray and cook un­der the grill for 12-15 min, turn­ing once, un­til cooked through. Wrap in the foil and set aside to rest for a few min.

2 Mean­while, heat a fry­ing pan over a medium heat, spray with a lit­tle oil, add the pep­per and onion and cook for 4-5 min, turn­ing oc­ca­sion­ally, un­til soft.

3 Take the wraps and spread the blue cheese over, then pile on the veg­eta­bles. Slice the chicken and ar­range on top with shred­ded let­tuce.
