BLUE CHEESE CHICKEN WRAPS
Serves 4 Ready in 25 min
300g chicken breast fillet
2 tbsp ready-made barbecue marinade Sunflower oil spray
1 small red pepper, deseeded and sliced 1 onion, sliced
Wraps, to serve
40g soft blue cheese Shredded iceberg lettuce, to serve
1 Cut 3-4 slits across the chicken breast and brush over the barbecue sauce to coat. Put the chicken on a foil-lined tray and cook under the grill for 12-15 min, turning once, until cooked through. Wrap in the foil and set aside to rest for a few min.
2 Meanwhile, heat a frying pan over a medium heat, spray with a little oil, add the pepper and onion and cook for 4-5 min, turning occasionally, until soft.
3 Take the wraps and spread the blue cheese over, then pile on the vegetables. Slice the chicken and arrange on top with shredded lettuce.
