Pea , bean & spinach soup
Serves 2 Ready in 15 min
Put 175g frozen peas and 175g frozen edamame beans into a saucepan. Pour in 500ml veg stock and 4 trimmed and chopped spring onions, 10 basil leaves and 60g spinach. Bring to the boil, then simmer for 10 min until the beans and peas are tender. Pour half of the soup into a blender and whizz until smooth. Return to the pan with the rest of the soup, add 300ml soya milk and warm through. Season well.
