Pea , bean & spinach soup

Serves 2 Ready in 15 min

Put 175g frozen peas and 175g frozen edamame beans into a saucepan. Pour in 500ml veg stock and 4 trimmed and chopped spring onions, 10 basil leaves and 60g spinach. Bring to the boil, then sim­mer for 10 min un­til the beans and peas are ten­der. Pour half of the soup into a blender and whizz un­til smooth. Re­turn to the pan with the rest of the soup, add 300ml soya milk and warm through. Sea­son well.
