Smoky wedges

About 750g potatoes (6 medium) 2 tbsp sun­flower oil

1-2 tsp smoked pa­prika

1 tsp cumin seeds, op­tional

Heat the oven to 220°C. Put a greased bak­ing sheet in to heat up. Cut the un­peeled potatoes into even-sized wedges. Toss in a bowl with the oil and pa­prika. Spread out onto the hot bak­ing sheet, sprin­kle with the cumin seeds, if us­ing, and bake in the lower half of the oven for 5 min. 2

Turn the oven tem­per­a­ture down to 180°C. Cook the wedges for about 30-40 min. Sea­son with sea salt and freshly ground black pep­per and then serve im­me­di­ately.
