About 750g potatoes (6 medium) 2 tbsp sunflower oil
1-2 tsp smoked paprika
1 tsp cumin seeds, optional
Heat the oven to 220°C. Put a greased baking sheet in to heat up. Cut the unpeeled potatoes into even-sized wedges. Toss in a bowl with the oil and paprika. Spread out onto the hot baking sheet, sprinkle with the cumin seeds, if using, and bake in the lower half of the oven for 5 min. 2
Turn the oven temperature down to 180°C. Cook the wedges for about 30-40 min. Season with sea salt and freshly ground black pepper and then serve immediately.
