300g oats

60g pump­kin seeds

60g sun­flower seeds

30g des­ic­cated co­conut

60g plain flour

90g soft dried apri­cots, chopped 90g dried cran­ber­ries 200g but­ter

200g golden syrup

150g mus­co­v­ado sugar 125g crunchy peanut but­ter


Heat oven to 160°C. Com­bine the oats, pump­kin and sun­flower seeds, co­conut, flour, apri­cots and cran­ber­ries in a large bowl and mix to­gether. 2 Gen­tly melt the but­ter with the golden syrup in a pan, then add the mus­co­v­ado sugar and peanut but­ter. Stir un­til melted. Pour into the dry in­gre­di­ents and mix un­til com­bined. 3

Spoon the mix­ture into a 20 x 30cm tin, greased and lined with bak­ing pa­per. Bake for 20-25 min or un­til golden and just firm. Cool in the tin.
