CHOCOLATE TRIFLE

With this dessert, simplicity is key. Choose quality ingredients and add cheer with festive garnishes.

Serves 6

● 700ml (24⁄5 cups) milk

— ● 45 ml (3 tbsp) caster sugar — 6 egg yolks

— ● 60 ml (4 tbsp) cornflour

— ● 45 ml (3 tbsp) cocoa powder —

● 100 g dark baking chocolate —

● 1 chocolate Swiss roll

— ● 400 g fresh berries

1. Add the milk to a large saucepan and heat to just below boiling point. Remove from the heat.

2. Whisk the sugar, yolks, cornflour and cocoa powder in a medium mixing bowl using a balloon whisk. Pour in half of the hot milk and whisk until combined. Add this mixture back to the remaining milk in the saucepan. Place the saucepan over medium heat and whisk the mixture until a thick custard forms. (It should have a consistency similar to that of white sauce.) Pour the mixture into a clean bowl and cover with GLAD Cling Wrap (Photo 1). Set aside until cool.

3. Line a baking tray with GLAD Bake & Cooking Paper. Melt the baking chocolate in the microwave oven on low heat. Pour the melted chocolate into a small GLAD Sandwich Bag and tie one corner to create a piping bag (Photo 2). Snip off one corner of the bag and pipe 6 small Christmas tree shapes on the baking paper. Cool in the fridge until set.

4. Whisk the cooled chocolate custard until runny. Slice the Swiss roll and place a slice in the base of each glass. Top with fresh berries and a spoonful of custard. Repeat the layers until the glasses are full. Cool in the fridge for

2 to 4 hours until set. Peel the chocolate trees off the baking paper.

5. To serve, top the individual trifles with whipped cream and garnish with chocolate trees.
