Sharpen up!
All knives require regular sharpening to ensure they are efficient and safe. The Wüsthof Universal two
Stage Knife Sharpener can be used on standard and Asian-style blades. The Stage 1 sharpener has carbide blades set at 28° or 14° angles and is designed to sharpen standard kitchen knives. The Stage 2 sharpener has ceramic rods that ensure a fine edge on the blade, and can be used to sharpen Asian-style knives such as the Japanese Santoku or Nakiri. These blades are set at 20° or 10°.
