Stage Knife Sharp­ener can be used on stan­dard and Asian-style blades. The Stage 1 sharp­ener has car­bide blades set at 28° or 14° an­gles and is de­signed to sharpen stan­dard kitchen knives. The Stage 2 sharp­ener has ce­ramic rods that en­sure a fine edge on the blade, and can be used to sharpen Asian-style knives such as the Ja­panese San­toku or Nakiri. Th­ese blades are set at 20° or 10°.
