To make 12 Hertzoggies, you will need:
For the sweet shortcrust pastry
225g cake flour plus extra, if needed
60g icing sugar
Large pinch of salt
100g cold butter, cubed 40ml water Softened butter (for greasing)
For the filling
250ml full-cream milk 2 tablespoons powdered gelatine 250ml Amarula cream liqueur 2 star anise
2 whole cloves
3 cardamom seeds, crushed 2 tablespoons castor sugar 2 teaspoons vanilla essence
Coconut meringue topping
2 large egg whites; 125g castor sugar; 1 tablespoon vanilla essence; 100g desiccated coconut, lightly toasted
