Sip and savour some festive cheer with this delicious vegan eggnog made using Clover Soy Milk

WHAT YOU NEED
1L (4 cups) Clover Soy Milk
200g extra-firm tofu
200g maple syrup
2 tsp vanilla essence
1½ tsp ground cinnamon + extra, to dust ¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp allspice
160ml (⅔ cup) rum
HOW TO DO IT
1 Place all of the ingredients in a blender and blitz until smooth and frothy.
2 Divide the mixture among 6 – 8 tumblers. Dust with ground cinnamon and serve. Refrigerate any leftovers.
