WARM CAB­BAGE, BA­CON & NUT SALAD WITH OR­ANGE DRESS­ING

For the salad, pre­heat the oven to 200˚C. Grease and line a bak­ing tray with bak­ing pa­per. Set aside un­til needed. Cut 1 large pur­ple cab­bage into wedges and place on the pre­pared bak­ing tray. Chop 200g streaky ba­con into small pieces and scat­ter the pieces over the cab­bage wedges. Driz­zle with olive oil and roast in the pre­heated oven for about 15 min­utes. Care­fully turn the cab­bage wedges and con­tinue to roast for an­other 15 min­utes. Re­move from oven and trans­fer to a serv­ing plat­ter. Top with a large hand­ful of mixed nuts. Set aside. For the dress­ing, com­bine the juice of 1 or­ange, 1 tbsp olive oil, ½ tsp chilli flakes/cayenne pep­per and 1 tbsp ap­ple cider vine­gar/brown vine­gar in a jug. Mix un­til well com­bined and sea­son with salt and freshly ground black pep­per, to taste. Driz­zle the dress­ing over the salad and serve warm.
