WARM CABBAGE, BACON & NUT SALAD WITH ORANGE DRESSING

For the salad, preheat the oven to 200˚C. Grease and line a baking tray with baking paper. Set aside until needed. Cut 1 large purple cabbage into wedges and place on the prepared baking tray. Chop 200g streaky bacon into small pieces and scatter the pieces over the cabbage wedges. Drizzle with olive oil and roast in the preheated oven for about 15 minutes. Carefully turn the cabbage wedges and continue to roast for another 15 minutes. Remove from oven and transfer to a serving platter. Top with a large handful of mixed nuts. Set aside. For the dressing, combine the juice of 1 orange, 1 tbsp olive oil, ½ tsp chilli flakes/cayenne pepper and 1 tbsp apple cider vinegar/brown vinegar in a jug. Mix until well combined and season with salt and freshly ground black pepper, to taste. Drizzle the dressing over the salad and serve warm.
