NO-BAKE FAIRY LIGHT “SOETKOEKIES”

WHAT YOU NEED

280g store-bought vanilla cake with frost­ing, bro­ken into chunks

½ tsp mixed spice zest of 1 or­ange

½ tsp ground cin­na­mon

½ tsp ground nut­meg

edi­ble cop­per balls/sprin­kles, to dec­o­rate

HOW TO DO IT

1 Line a bak­ing sheet with bak­ing pa­per. Set aside un­til needed.

2 Place the cake, mixed spice, or­ange zest, and ground cin­na­mon and nut­meg in a food pro­ces­sor. Blitz un­til a stiff dough forms.

3 Use a ta­ble­spoon to scoop dol­lops of the mix­ture. Roll each spoon­ful be­tween the palms of your hands to form a ball. Re­peat un­til all of the mix­ture has been used. Wet your hands to keep the mix­ture from stick­ing to your palms, if needed.

4 Roll the balls in the cop­per balls/ sprin­kles, lightly press­ing the dec­o­ra­tions into the balls to keep them in place.

5 Trans­fer the dec­o­rated balls to the pre­pared bak­ing tray and, us­ing a wet fork, gen­tly flat­ten the balls to cre­ate “soetkoekies”.

6 Store the cook­ies in an air­tight con­tainer in the fridge for up to

1 week.
