NO-BAKE FAIRY LIGHT “SOETKOEKIES”

WHAT YOU NEED
280g store-bought vanilla cake with frosting, broken into chunks
½ tsp mixed spice zest of 1 orange
½ tsp ground cinnamon
½ tsp ground nutmeg
edible copper balls/sprinkles, to decorate
HOW TO DO IT
1 Line a baking sheet with baking paper. Set aside until needed.
2 Place the cake, mixed spice, orange zest, and ground cinnamon and nutmeg in a food processor. Blitz until a stiff dough forms.
3 Use a tablespoon to scoop dollops of the mixture. Roll each spoonful between the palms of your hands to form a ball. Repeat until all of the mixture has been used. Wet your hands to keep the mixture from sticking to your palms, if needed.
4 Roll the balls in the copper balls/ sprinkles, lightly pressing the decorations into the balls to keep them in place.
5 Transfer the decorated balls to the prepared baking tray and, using a wet fork, gently flatten the balls to create “soetkoekies”.
