WHAT YOU NEED juice of 2 limes

2 hand­fuls wa­ter­melon cubes (about 1,5cm in size)

4cm fresh ginger, un­peeled and finely chopped

60ml (¼ cup) vodka hand­ful ice cubes

150ml chilled sparkling wa­ter

150ml chilled sparkling sugar-free lemon­ade

wa­ter­melon wedges, to gar­nish lime slices, to gar­nish HOW TO DO IT

1 Place the lime juice, wa­ter­melon cubes, chopped ginger, vodka, ice cubes and ½ of the sparkling wa­ter in a large cock­tail shaker. Shake vig­or­ously, about 30 sec­onds. Set aside to let the flavours in­fuse, about 5 min­utes, and then shake again for about 10 sec­onds. 2 Us­ing a fine-mesh sieve as a fil­ter, slowly pour the cock­tail mix­ture into two Cham­pagne coupes. Top with the re­main­ing ½ of the sparkling wa­ter and the sparkling sugar-free lemon­ade.

3 Gar­nish with the wa­ter­melon wedges and lime slices. Serve im­me­di­ately.
