Crazy good vegan

ilove ooey, gooey, messy, delicious food,” says Chloe Coscarelli, a chef and a 14-year vegan (she eats no meat or dairy). “I don’t think healthy food has to be dry or bland.” Her dishes are decidedly neither, as she proves in her new cookbook Chloe Flavor (Random House; R521), which has, yes, a few salads but also a deep bench of rich, flavourful pastas, curries, burgers and desserts.
Even better? Her recipes don’t require hours in the kitchen tinkering with weird ingredients. “I buy precut veggies and peeled garlic. I take a lot of shortcuts!” Chloe says. And she won’t shame you if you’re not ready to give up cheese or the occasional burger. “Some people see veganism as an all-or-nothing lifestyle. But I want people to see it like any other cuisine – something they have once a week,” she says. “My food is for everyone.”
