ilove ooey, gooey, messy, de­li­cious food,” says Chloe Coscarelli, a chef and a 14-year ve­gan (she eats no meat or dairy). “I don’t think healthy food has to be dry or bland.” Her dishes are de­cid­edly nei­ther, as she proves in her new cook­book Chloe Flavor (Ran­dom House; R521), which has, yes, a few sal­ads but also a deep bench of rich, flavour­ful pas­tas, cur­ries, burg­ers and desserts.

Even bet­ter? Her recipes don’t re­quire hours in the kitchen tin­ker­ing with weird in­gre­di­ents. “I buy pre­cut veg­gies and peeled gar­lic. I take a lot of short­cuts!” Chloe says. And she won’t shame you if you’re not ready to give up cheese or the oc­ca­sional burger. “Some peo­ple see ve­g­an­ism as an all-or-noth­ing life­style. But I want peo­ple to see it like any other cui­sine – some­thing they have once a week,” she says. “My food is for ev­ery­one.”
