Pistachio dukkah
SERVES 1
10g Pink peppercorn 15g Cumin seeds
25g Coriander seeds 150g Pistachio nuts 25g Sunflower seeds 5g Fennel seeds
20g Sesame seeds 10g Paprika
10g Salt
> Roast each item individually in a pan until golden brown, except salt.
> Grind the pink peppercorn, fennel, cumin and coriander in a spice grinder.
> Pulse the remaining ingredients in a blender.
> Add ground spices and mix in.
