Take your ham and cheese sand­wich to the next level with a strong cheese sauce and mus­tard.


(enough for 4)

5 ta­ble­spoons but­ter, plus ex­tra

2 ta­ble­spoons flour

¾ cup milk

1 ta­ble­spoon Di­jon mus­tard

1 egg yolk

8 slices bread

4 slices ham

1 cup grated Gruyère cheese

Here’s how

1 Melt the but­ter in a pot and mix in the flour. Stir in the milk bit by bit un­til well com­bined and sim­mer for 3 min­utes.

2 Re­move from the heat and mix in the mus­tard and the egg yolk.

3 Di­vide the sauce, ham, and cheese be­tween the 4 slices bread and top with the re­main­ing slices.

4 Melt the re­main­ing but­ter in a pan and fry the sand­wiches un­til crisp and golden brown on both sides.
