What is a bazaar with­out a mince jaf­fel? I like mine with some veg­gies and a strong dose of curry.

In­gre­di­ents

(enough for 8)

250 g beef mince

250 g pork sausages

1 ta­ble­spoon olive oil

1 ta­ble­spoon curry pow­der

½ tea­spoon fine cumin

½ cup frozen peas

2 car­rots, finely chopped

½ cup wa­ter

salt and pep­per, to taste

For the jaffels

16 slices white bread

but­ter

Here’s how

1 Put the mince in a pan, then squeeze pork out of the sausage cas­ings, and add to the mince.

2 Heat the olive oil in a pan, add the meat and the curry pow­der and cumin and cook un­til light brown and cooked through.

3 Stir in the peas, car­rots, and wa­ter, flavour to taste with salt and pep­per, cover with the lid and let it sim­mer for 10 min­utes.

4 Spread the bread with but­ter, fill two slices of bread with a spoon­ful of the meat mix­ture, and fry the sand­wich un­til golden brown in the jaf­fel pan.
