BAZAAR JAFFELS
Like grandma used to make
What is a bazaar without a mince jaffel? I like mine with some veggies and a strong dose of curry.
Ingredients
(enough for 8)
250 g beef mince
250 g pork sausages
1 tablespoon olive oil
1 tablespoon curry powder
½ teaspoon fine cumin
½ cup frozen peas
2 carrots, finely chopped
½ cup water
salt and pepper, to taste
For the jaffels
16 slices white bread
butter
Here’s how
1 Put the mince in a pan, then squeeze pork out of the sausage casings, and add to the mince.
2 Heat the olive oil in a pan, add the meat and the curry powder and cumin and cook until light brown and cooked through.
3 Stir in the peas, carrots, and water, flavour to taste with salt and pepper, cover with the lid and let it simmer for 10 minutes.
4 Spread the bread with butter, fill two slices of bread with a spoonful of the meat mixture, and fry the sandwich until golden brown in the jaffel pan.
go! Drive & Camp says You can freeze this mixture and use it later as a filling in anything from a roti to a braai pie.
