HAM, AVO AND EGG SAND­WICH

Break­fast of champs

This all-in-one break­fast sand­wich can be made quickly and eas­ily in the camp­site.

In­gre­di­ents

(enough for 1)

2 slices bread

but­ter

2 eggs chilli sauce, to taste

½ av­o­cado, mushed

2 slices ham

salt and pep­per, to taste

Here’s how

1 Spread but­ter on both sides of the bread slices.

2 Make a hole in the mid­dle of each slice – a cham­pagne glass is per­fect.

3 Heat a pan and put the bread slices in it. Break an egg in­side the hole in the bread so that the yolk rests in­side the hole and use the back of a spoon to spread the egg white over the bread slice.

4 Fry the bread un­til the bot­tom is crisp and golden brown, turn around and fry for an­other few min­utes. Re­move from the pan.

5 Spread chilli sauce and avo on the bread and ar­range the ham on top, flavour to taste with salt and black pep­per, and end with the sec­ond slice of bread. En­joy!
