HAM, AVO AND EGG SANDWICH
Breakfast of champs
This all-in-one breakfast sandwich can be made quickly and easily in the campsite.
(enough for 1)
2 slices bread
2 eggs chilli sauce, to taste
½ avocado, mushed
2 slices ham
salt and pepper, to taste
1 Spread butter on both sides of the bread slices.
2 Make a hole in the middle of each slice – a champagne glass is perfect.
3 Heat a pan and put the bread slices in it. Break an egg inside the hole in the bread so that the yolk rests inside the hole and use the back of a spoon to spread the egg white over the bread slice.
4 Fry the bread until the bottom is crisp and golden brown, turn around and fry for another few minutes. Remove from the pan.
5 Spread chilli sauce and avo on the bread and arrange the ham on top, flavour to taste with salt and black pepper, and end with the second slice of bread. Enjoy!
