With a twist
Plan ahead and make these patties at home before you leave for the weekend. Then you don’t have to take along bottles and packets and you know you’re going to eat like a royal.
Ingredients
(enough for 4)
500 g lamb mince 20 pistachios, finely chopped 2 tablespoons capers, finely chopped
8 large green olives, finely chopped
3 anchovy fillets, finely chopped salt and pepper, to taste 2 tablespoons olive oil 4 tablespoons barbecue sauce blue cheese slices, to taste lettuce rolls, buttered
Here’s how
1 Mix the lamb, pistachios, capers, olives and anchovies together in a bowl. Flavour to taste with salt and pepper, but remember that anchovy is very salty. Shape the burger patties with your hands.
2 Heat a cast-iron pan over the coals till very hot. Rub olive oil on the patties and fry for 3 minutes on the one side, flip over, and braai for 2 minutes on the other side. Put barbecue sauce on the patties and scorch quickly so that the sauce caramelises.
3 Serve the patties with the blue cheese and lettuce on the rolls. Garnish with extra capers and olives to taste.
