These pita breads are just the thing to keep the hunger pangs at bay in between meals at the campsite.
4 pita breads 2 cans (170 g) tuna, drained ½ mini cucumber, cut into cubes 3 firm tomatoes, seeded and cut into cubes 125 ml gouda cheese, cubed 1 big gherkin, finely grated 60-80 ml mayonnaise salt, to taste
1 Grease a pan lightly with oil and heat up over a low flame on a gas stove. 2 Place one pita at a time in the pan and braai until the bottom is golden brown. Flip it and braai on the other side. 3 Remove the pita from the pan and cut in half. Open the pockets with your fingers. Repeat the process with the remaining pitas. 4 Mix together the tuna, cucumber, cheese and gherkin. Add some mayo and flavour to taste with salt. Dish spoonfuls of the mixture into the pitas.
