Two unbeatable flavours
You won’t be longing for your crispy baked potatoes if you make this dish in the campsite!
3 tablespoons sunflower oil 2 onions, chopped
250 g streaky bacon, chopped 8 large waxy potatoes salt and pepper to taste,
1 Heat the oil in a large flat-bottom pot or pan. Add the onions and bacon and fry over moderate coals for 5 minutes, or until the fat from the bacon begins to render and the onions soften.
2 In the meantime, peel the potatoes and slice them into blocks of about 2 cm in size.
3 Add the potatoes to the pot and stir through once. Sauté the potatoes until they begin to turn brown and crispy. Keep stirring to prevent them from burning, but not so much that you end up with mashed potato.
4 Season the potatoes with salt and pepper. After about15-20 minutes of braaiing them, they should be well cooked and deliciously flavoured with the bacon. Serve immediately.
