Two un­beat­able flavours

You won’t be long­ing for your crispy baked pota­toes if you make this dish in the camp­site!

In­gre­di­ents

(serves 6)

3 ta­ble­spoons sun­flower oil 2 onions, chopped

250 g streaky ba­con, chopped 8 large waxy pota­toes salt and pep­per to taste,

Here’s how

1 Heat the oil in a large flat-bot­tom pot or pan. Add the onions and ba­con and fry over mod­er­ate coals for 5 min­utes, or un­til the fat from the ba­con be­gins to ren­der and the onions soften.

2 In the mean­time, peel the pota­toes and slice them into blocks of about 2 cm in size.

3 Add the pota­toes to the pot and stir through once. Sauté the pota­toes un­til they be­gin to turn brown and crispy. Keep stir­ring to pre­vent them from burn­ing, but not so much that you end up with mashed potato.

4 Sea­son the pota­toes with salt and pep­per. Af­ter about15-20 min­utes of braai­ing them, they should be well cooked and de­li­ciously flavoured with the ba­con. Serve im­me­di­ately.
