Breakfast deluxe POTATO FRITTERS WITH PORK SAUSAGES AND TOMATOES

For best results, make sure these potato fritters are nice and thin.

Ingredient­s

(serves 6)

6 medium-sized potatoes

1 small onion, peeled 2 tablespoon­s self-raising flour 3 tablespoon­s butter 1 tablespoon oil

12 small chipolata pork sausages 200 g cherry tomatoes 2 tablespoon­s of your favourite braai sauce (we used Hasty Tasty Sweet & Sour) a sprinkle of fresh micro herbs (optional)

Here’s how

1 Grate the potatoes and onion on the coarse side of a grater. Turn out the grated vegetables onto a dry dishcloth and squeeze out all the moisture. Place the dry mix into a mixing bowl and stir in the flour. Season with salt and pepper.

2 Melt the butter and oil in the skottel. Spoon a heaped spoonful of the potato mixture into the centre of the pan and flatten it with the back of a spoon to form an even fritter. Fry it a little on the one side, right there in the middle of the pan, before turning it over and moving toward the edge of the dish, where the heat is more moderate. Press it flat with your spatula and neatly re-assemble it where needed. The batter is loose and can be re-formed if a fritter breaks.

3 Place a second spoonful of potato in the hot centre of the dish and repeat this process until you’ve used all the batter. Now fry them until golden and crisp all over –add more oil if needed.

4 Slide the crispy fritters closer to the edge of the platter to keep them warm and fry the sausages in the centre until golden. After about 5 minutes, add the tomatoes and continue to fry until the sausages are cooked and the tomatoes burst and start forming a bit of a sauce.

5 Glaze the sausages with the braai sauce and sprinkle over the herbs. Serve with the potato fritters. It’s delicious to wrap the crispy fritter almost like a taco around a sausage with a spoonful of tomatoes!
