Instant fix

We are off-road enthusiasts and love heading into the bundus. In the pic, we’re camping at the Taita Falcon Lodge near the Victoria Falls. When you enter the unknown, you must plan and take many days’ worth of food supplies as it’s so remote. Think of the Kaokoland in Namibia, for example: there are almost no stores, and if you find one, you only get basic items. Should you not have a fridge/freezer, you’ll have to rely on your ‘dry rations’. Here’s a corned beef and tinned beans recipe I love to make. It’s quick and easy with ingredients that keep a long time. 1 Fry some onions. 2 Add cooked potato slices plus a tin each of tinned beans and corned beef (cut into cubes). 3 Heat everything together until warm.
