Holey moley, gaucamole!
GUACAMOLE
Guacamole, tomato salsa and sour cream are the three amigos that turn campfire food into a Mexican fiesta. Guacamole on its own, served with chips or julienned vegetables to dip into it is, of course, also a delicious snack while you wait for the coals to be ready for braaiing.
Ingredients
(makes 1½ cups)
1 large ripe avocado
1 tablespoon fresh lemon juice (or to taste)
¼ cup creamy mayonnaise
¼ cup Greek yoghurt
1 tablespoon finely chopped red onion a generous pinch of dry mixed herbs 1 teaspoon Tabasco sauce (or to taste) ½ tomato, finely chopped
Here’s how
1 Cut the avocado in half and remove the pit before carefully pulling off the peel. Cube the avo and place in a bowl with the lemon juice – this prevents the avocado from turning brown.
2 Stir in the mayonnaise yoghurt and onion, and season to taste with salt, pepper, dry mixed herbs and Tabasco.
3 Mash everything with a fork to a coarse guacamole and then stir in the tomato. Spoon the guacamole into a bowl and eat it within an hour.
