Fry, fry, all on one side
BREAKFAST SARMIES WITH A BITE
Not everyone likes warm avocado – so if you really don’t want to try something new, fry the bacon on its own and place the uncooked avocado on the rolls.
Ingredients
(serves 4)
2 ripe avocados
4-8 streaky bacon strips 2 tablespoons olive oil 4 teaspoons sriracha sauce (or use Lawmans Mexican Hot Sauce)
4 large soft-boiled eggs, shelled
4 bread rolls or toast real butter for smearing
Here’s how
1 Peel the avocados and cut them in half. Remove the pits and season the halves to taste with salt and pepper. Now wrap a strip or two of bacon around each one and secure them with a toothpick to hold it all together.
2 Pan-fry the bacon-wrapped avocados in the olive oil until the bacon is golden brown. Paint the hot sauce over the bacon and fry for another minute over the heat until glossy – just make sure the sauce doesn’t burn. Remove the toothpicks.
3 Cut the rolls in half and grill the sliced sides over medium coals (or in a dry pan) until they turn a lovely colour. Spread a thick layer of real butter to each. 4 Now arrange a fried baconwrapped avocado and softboiled egg on top of each sandwich and cover with the other half. Eat it right away!
