HAKE WITH BACON, TOMATO AND OLIVES

The bacon not only lends flavour to the delicate fish, it also stops it from drying out when you pan-fry it.

Ingredient­s

(serves 4)

4 portions firm hake

4-8 strips streaky bacon 2 tablespoon­s olive oil 1 tablespoon sundried tomato pesto

1 tin (400 g) chopped tomatoes with herbs

12 green olives, sliced

½ small red onion, sliced thinly salt and freshly ground black pepper fresh bread to mop up the sauce
