Asian persuasion PORK CHOPS MARINATED IN SOY SAUCE

This fragrant marinade gives colour and flavour without tasting too foreign.

Ingredient­s

(serves 4) 4 pork loin chops, skin removed

FOR THE MARINADE

1/3 cup soy sauce (preferably the low-salt type) 2 tablespoon­s Worcester sauce

1 tablespoon brown sugar

1 teaspoon strong mustard

1 clove of garlic, finely chopped a generous pinch of black pepper

1 tablespoon sesame oil

Here’s how

1 Mix together the marinade ingredient­s in a Ziploc bag, add the chops and mix everything well. Place the bag in the fridge for at least three hours – overnight is also good.

2 Remove the chops and dab them dry with kitchen paper towels.

3 Braai the chops over hot coals – braai the fat side first until it has a nice colour, and then braai them for 3-4 minutes on each side until nicely browned. Make sure the coals aren’t so hot that the meat scorches before it’s cooked. Baste the chops with some of the extra marinade and braai the chops for a few more minutes on each side until they’re cooked (and not pink against the bone). Serve the juicy chops with roasted potatoes that’s flavoured with orange and sesame seeds.

Drive & Camp says Use a pair of sharp kitchen scissors to cut the skin off the chops and make sure the fat layer is even.
