BLT PASTA SALAD

The British are known for their ‘bacon, lettuce and tomato’. If that combinatio­n forms the three musketeers of salad, this chipotle mayonnaise is Dogtanian!

Ingredient­s

(serves 6)

300 g pasta screws

200 g bacon strips, chopped 2 tablespoon­s olive oil

2/3 cup chipotle mayonnaise

200 g cherry tomatoes, halved

1 small red onion, finely chopped a large handful (80 g) spinach, shredded

Here’s how

the pasta in salted water until al dente. Drain, but retain some of the pasta water. the bacon in the olive oil until crispy and mix it through the hot pasta. The bacon fat will prevent the pasta from sticking as it cools. the mayonnaise with enough of the pasta water to make it runny – but don’t make it too watery. the mayonnaise, tomato, onion and spinach into the bacon pasta and serve at room temperatur­e.

Chipotle is a type of smoked jalapeño that’s primarily used in Mexican cuisine. If you don’t have ready-made chipotle mayonnaise, simply mix a spoonful of sriracha sauce, chopped preserved jalapeño peppers or a pinch of smoked paprika into a good creamy mayonnaise.
