LUXURY SWEET POTATO PURSES

Whiskey that’s been aged in wooden barrels has a subtle smokey profile that perfectly complement­s this sage-andbacon butter.

Ingredient­s

(serves 6)

1 kg small sweet potatoes (at least 12), washed 2 tablespoon­s olive oil a solid pinch Maldon sea salt

100 g bacon bits

2 heaped tablespoon­s butter

6 fresh sage leaves (or use a pinch of dry sage) ¼ cup pecan nuts, coarsely chopped a tot (25 ml) whiskey

Here’s how

the sweet potatoes a few times and rub in the olive oil and salt in all over. Wrap them tightly in foil with the shiny side in.

the foil packets on the grid over the coals or carefully directly on the coals. Make sure they bake slowly and get just the right amount of heat. Their skin should be crispy without being burnt.

the bacon in the butter until crisp. Stir in the sage leaves, pecans and whiskey, and mix everything through.

With this dish you can decide for yourself how luxurious you want to make the butter sauce by adjusting the amount of bacon and nuts. Even just with the whiskey butter, these crispy baked sweet potatoes are the bomb.
