PEANUT BUTTER AND HONEY BISCUITS

Crunchy treat

These giant biscuits are delicious with a cup of coffee in the afternoon.

Ingredient­s

(makes ± 16 biscuits)

1 cup smooth peanut butter ½ cup honey

1 large egg

A pinch salt

2 cups self-raising flour

Here’s how

1 Preheat the oven to 170 ºC, and line a baking tray with baking paper.

2Mix the peanut butter, honey, and egg with a wooden spoon until smooth. Then add the salt and flour to form a nice firm dough. Use your hands to knead it lightly until the dough is just smooth.

3 Divide the dough into 16 pieces and roll each into a ball. Arrange the balls on a baking sheet, and flatten each one slightly with your fingers or a fork. If you have time, allow the dough to rest in the fridge for 30 minutes – then the biscuits will spread less in the oven.

4 Bake the biscuits for 10 minutes or until lightly browned. Watch your oven closely – remember, honey burns quicker than sugar.

5 Allow the cookies to cool on a wire rack – they firm up as they cool. Store them in an airtight container as soon as they have cooled completely.

Drive & Camp says If you have freezing facilities at your camp, make an ice-cream sandwich with two biscuits and a scoop of ice cream. Dip its side into chopped peanuts for extra crunch – trust us, you won’t regret it!
