Fried snoek with a hint of sweetness in the sauce is a true South African dish.

Ingredient­s

(serves 4)

1 cup creamy mayonnaise 1 tablespoon apricot jam 2 tablespoon­s fresh lemon juice

(or to taste) a generous pinch dry chilli flakes ½ cup melted garlic butter 1 tablespoon olive oil

1 snoek around 700 g, head removed and cut into portions

2 tablespoon­s chopped spring onions

Here’s how

1 Stir the mayonnaise, apricot jam, lemon juice, chilli, and butter together until smooth. Set aside.

2 Place a piece of foil with the dull side up on your grid and baste the foil with olive oil. Pack the portions of snoek, skin side down, and braai them for about 10 minutes until half cooked. (You don’t turn them over.)

3 Heat the sauce in a pan or saucepan until hot. Carefully add the fish to the sauce and simmer until just cooked and fragrant. Sprinkle over the spring onions and season to taste with salt and pepper.
