CAMPFIRE VEGETABLES
You say potato…
Covered in buttery goodness, these veggies are hard to resist!
Ingredients
(serves 6)
1 kg baby potatoes, boiled in salted water for 5-10 minutes 3 tablespoons olive oil ½ teaspoon dry chilli flakes ½ teaspoon dry mixed herbs 1 red pepper, sliced into strips 500 g butternut, cut into bite-sized cubes a large lump of butter 3 tablespoons crispy onion flakes
Here’s how
1Mix together the potatoes, oil, chilli, herbs, red pepper, and butternut in a large foil dish and season well with salt and pepper.
2Dot the butter over the vegetables and cover properly with foil – ready to braai! Scrape open a space inside the coals and place the foil dish on top with moderate heat around it. Braai it for about 20 minutes; shake the dish several times to make sure everything inside is cooking evenly. Allow to stand for five minutes and test the vegetables – watch out for the steam! Once the vegetables are deliciously soft and cooked, add some more butter, sprinkle over the crispy onion flakes, and serve.
