Easy peasy
PASTA SALAD WITH TUNA
This is my mom Hymne’s creation and the easiest lunch you could imagine. If you’re very hungry, add a can of drained mixed beans plus boiled eggs cut into quarters. The fresh herbs are optional.
Ingredients
(serves 4 as a light meal)
1 cup rice pasta (Rosmarino) ½ cup mayonnaise 1 tablespoon tomato sauce a few drops Tabasco sauce (to taste)
2 tablespoons milk
2 tins (170 g each) tuna – I like the ones in oil 1 tablespoon capers 2 anchovy fillets, finely chopped
½ cup green olives, stuffed with red pepper 4 plum tomatoes, diced
½ cup mixed fresh herbs (think basil, parsley, chives, and rocket), shredded – or use some fresh spinach leaves
Here’s how
1 Boil the pasta rice in salted water until al dente – follow the directions on the package. Rinse in cold water and drain.
2 Whisk together the mayonnaise, tomato sauce, Tabasco, and milk, and mix through the pasta.
3Add the rest of the ingredients to the salad. Season to taste with salt and freshly ground black pepper – remember, the olives, capers, and anchovies are already salty.
