CLASSIC POTATO SALAD Po-tay-to, po-tah-to

There are only a handful of ingredient­s, so the mayo makes the salad – choose one you really like.

Ingredient­s

(serves 4-6 as a side dish)

600 g medium-sized potatoes 1 cup creamy mayonnaise 1-2 tablespoon­s milk ½ teaspoon garlic powder ½ teaspoon mixed dry herbs

Salt and freshly ground black pepper a pinch sugar

6 gherkins, finely chopped ½ small red onion, finely chopped

4 hard-boiled eggs, peeled a sprinkle cayenne pepper

Here’s how

1 Boil the potatoes in salted water until cooked. Drain and allow to cool until you can work with them with your hands. Then peel them and break into larger pieces.

2 Beat the mayonnaise with enough milk to make it runny. Season the mixture with the garlic and herbs, then add salt, pepper, and sugar to taste. Immediatel­y pour the sauce over the warm potatoes.

3Mix the gherkin and onion through the salad and spoon onto a pretty plate. Chop the eggs (or grate them) and arrange on top of the salad. Finally, add a sprinkle of cayenne pepper and serve.
