CLASSIC POTATO SALAD Po-tay-to, po-tah-to
There are only a handful of ingredients, so the mayo makes the salad – choose one you really like.
Ingredients
(serves 4-6 as a side dish)
600 g medium-sized potatoes 1 cup creamy mayonnaise 1-2 tablespoons milk ½ teaspoon garlic powder ½ teaspoon mixed dry herbs
Salt and freshly ground black pepper a pinch sugar
6 gherkins, finely chopped ½ small red onion, finely chopped
4 hard-boiled eggs, peeled a sprinkle cayenne pepper
Here’s how
1 Boil the potatoes in salted water until cooked. Drain and allow to cool until you can work with them with your hands. Then peel them and break into larger pieces.
2 Beat the mayonnaise with enough milk to make it runny. Season the mixture with the garlic and herbs, then add salt, pepper, and sugar to taste. Immediately pour the sauce over the warm potatoes.
3Mix the gherkin and onion through the salad and spoon onto a pretty plate. Chop the eggs (or grate them) and arrange on top of the salad. Finally, add a sprinkle of cayenne pepper and serve.
