LUXURY THREE-CHEESE BRAAIBROOD­JIES

Say ‘cheese’!

Few things come close to a classic braaibrood­jie on storebough­t white bread, but if you are going to experiment, I highly recommend this combinatio­n.

Ingredient­s

(make 6 sandwiches)

12 slices of ciabatta or sourdough bread (make sure all the slices are roughly the same size)

2 tablespoon­s sun-dried tomato pesto

1 red onion, thinly sliced 3 medium or 12 cherry tomatoes, sliced

(see the tip at the bottom of the recipe)

2 cups mixed grated cheese – we used gouda, white cheddar and mozzarella butter, soft for easy spreading salt and freshly ground black pepper

Here’s how

1 Spread six slices of bread with a thin layer of pesto. Now add the onion, tomato slices, salt and pepper and lastly the cheese on all six. Place the other slices of bread on top and press down firmly. Now spread the sandwiches on the outside with butter – the thicker the butter, the browner the sandwich.

2 Pack the sandwiches in a folding grid and braai them over medium-high coals until nicely golden brown all over, until there are grid lines on the outside and the cheese inside has melted. Serve immediatel­y. Drive & Camp says If you can’t get your hands on red, ripe tomatoes, the fragrant pesto is enough. Rather don’t use a tomato that isn’t perfect.
