Peach and prosciutto salad served in a baked salad dish

Serves 4 Preparatio­n time 30 minutes plus marinating time Baking time 15 minutes

Your guests will love the look and taste of this salad dish, and it is really easy to make.

You need

FOR THE SALAD DISH • 110g cake flour • 55g rye flour • 2 tablespoon­s (30ml) black sesame seeds • a handful of Parmesan or Gruyère cheese • ½ teaspoon (2,5ml) salt • ¼ cup (60ml) olive oil • ice-cold water

FOR THE BASIL VINAIGRETT­E • 1 small shallot or ¼ red onion • a large handful of basil leaves • ¼ cup (60ml) white balsamic or

apple-cider vinegar • 2 teaspoons (10ml) Dijon mustard • a pinch of salt • ¾ cup (180ml) olive oil

FOR THE SALAD • 2-3 nectarines • 1 head of lettuce, separated into leaves –

use iceberg, lamb’s or butter lettuce • 5 slices prosciutto • ¼ cup (60ml) grated Parmesan • ½ cup (125ml) pistachios or pumpkin

seeds, toasted

This is how

Make the salad dish Preheat the oven to 200°C. Grease and line a 20cm springform tin with baking paper. In a mixing bowl, combine the flour, sesame seeds, cheese and salt, and add the olive oil and a little water. Knead to form a dough that doesn’t stick to your hands. Sprinkle flour on a work surface and roll out the dough with a rolling pin.

Line the prepared tin with the dough. If it breaks, press it together so there are no holes. Prick the base with a fork, cover it with baking paper, scatter dried beans on top and bake blind for 10 minutes. Remove the beans and bake for a further 5 minutes or until the dough is light brown. (See the tip on the right.) Make the salad dressing Pulse all the ingredient­s in a food processor. Make the salad Slice the nectarines in half and heat a griddle pan to smoking point. Fry the nectarines quickly, remove and cut into wedges. Place the salad leaves in the baked salad dish, arrange the nectarines and prosciutto on top, and scatter the Parmesan and nuts on top. Serve the salad with the dressing in a jug on the side. TIP Do you want to make a salad bowl like the one in the photo instead? Turn an enamel or metal bowl upside down, spray the outside with non-stick cooking spray and drape the dough over it. Bake as below (on the photo) and then remove the baked salad bowl carefully. >
